The menu is a '6 course Taste of Ireland Menu' and will feature the following items:
Canape Reception
Amuse Bouche
Celeriac mousse with Bellingham Blue Cheese Feuillet, smoked mussel and seafood foam
Soup
Termon- feckin Leek and potato soup with a savoury scone and a bacon butter
Starter
Mc Cormac's Black pudding, spinach and basil aioli, radishes, roasted beetroot, Corleggy goat’s cheese mousse and buttered asparagus cooked sous-vide
Fish
Irish Grilled mackerel, with a pickled sweet mustard salad and a Burren apple balsamic gel and fennel aioli
Tasting of beef
‘’Brehan Ulster black’’ braised beef cheek, feather blade and beef fillet with spinach and barley risotto, pomme anna potato and beef jus
Dessert
Flavours of Coole Swan, coffee and chocolate and Lannliere honeycomb
